Great Fresh, Summer Recipe: Pizza on the Grill!

Grilled Tomato-Basil

Thanks to my buddy Mike for this awesome suggestion!! This recipe is great if you’re hungry for pizza and don’t want to heat up your oven (or prepare a crust)!!

This is a simple “pizza” you can make outside on your grill using pre-made tortillas for the crust!

INGREDIENTS:

For each pizza, you’ll need:

1 tortilla (we use Food for Life brand; find it in the freezer section of most health stores)
1 TBSP olive oil (approx.)
1 large clove garlic, pressed
1/8 tsp dried oregano
1 Roma tomato, thinly sliced
2 large leaves fresh basil, sliced
1 TBSP freshly shredded Parmesan cheese (optional)*
1/2 cup shredded cheese (we use 1/2 Provolone & half Mozzarella)*

*Buy bricks of cheese and shred them yourself to avoid additives. (Seriously, take a look at the ingredients list on pre-shredded varieties!)

INSTRUCTIONS:

Preheat grill to about 350 degrees.

Brush both sides of the tortillas with olive oil. Spread garlic evenly on the top. Sprinkle with oregano. Add tomatoes and basil. Sprinkle evenly with cheese.

Set “pizzas” directly on the grill, and cook for about 2 minutes, until cheese is melted.

These burn easily, so don’t take your eyes off of them!!

Let rest for a couple minutes before serving!!

Note – Of course, you can use whatever toppings you like and/or use pizza sauce instead of just garlic and olive oil, etc. But this is our favorite combo!

Homemade Catalina/French Dressing Recipe

This dressing is especially great for taco salads or any salad with leftover meat or hard-boiled eggs on it!

INGREDIENTS:

1/2 cup extra virgin olive oil
1/4 cup raw apple cider vinegar (we use Bragg brand)
2 TBSP raw honey
2 TBSP tomato paste (only ingredient should be, “tomatoes”)
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprika
¼ tsp dry mustard
¼ tsp chili powder
¼ tsp freshly ground black pepper

NOTE: Only ingredient in each spice should be that spice (e.g., “garlic”). The chili powder should list just single, real spices (e.g., “chili powder, paprika, onion, etc.) and no vague words like “spices” or chemical ingredients you don’t understand!)

DIRECTIONS: 

Whisk ingredients together in a bowl.

Use a funnel to transfer to a storage bottle.

Enjoy!

This recipe makes about 1 cup.

If you try it and like it, save time by making a quadruple batch (which will fill a 32 oz. jar as shown here – although filling a bottle that full does make it difficult to shake it well); it will also use nearly the whole 6 oz. can of tomato paste, too.

How to Make ADDITIVE-FREE Grilled Chicken w/ Pasta

This dinner is simple, tasty and won’t break the budget! See below for recipe and grocery selection tips….

Grilled, boneless/skinless chicken thighs – Sprinkle both sides of meat with garlic powder, sea salt, and black pepper. Throw on the grill! Sometimes we add onion powder, too!

Don’t use those pre-made grilling seasonings from the store – most are full of additives and mystery ingredients! Stick to whole, real herbs and spices. But still ….check the labels for surprise ingredients – for instance, “garlic salt” often contains much more than just garlic and salt!

Make sure the chicken you buy is free of any additives, solutions or broth! If there’s no ingredients label on the package…be sure to ASK the butcher….assume nothing!

Garlic butter noodles – Cook whole wheat angel hair pasta according to package directions (the only ingredient listed should be “whole wheat”). For every 8 ounces of noodles, you’ll need 1/2 stick butter and 1/2 teaspoon garlic powder. While noodles are draining in a strainer, melt butter in the pan and then stir in the garlic powder. Return noodles to the pan and toss to coat. Add sea salt and pepper, to taste. Yum! 8 ounces of pasta yields about 4 servings (as long as they’re not as huge as MY “serving” shown here).  🙂

Check the ingredients on your butter!! At most, the ingredients should read, “cream (or “cultured cream”) and salt.” Many varieties add “natural flavor,” especially if the butter is unsalted, so beware. And, please tell me you’re not eating margarine!!! That’s a whole other blog post in itself!

Freshly sliced cucumber (or veggies of your choice). Actually, I’d recommend something more colorful like carrots, tomatoes or bell peppers to make the plate more interesting, but all I had on hand were cucumbers!

Lemonade
(sweetened with raw honey!)

-¾ cup raw honey (or less, to taste)
-1 cup lemon juice (preferably freshly squeezed)
-6 cups water or carbonated water
-ice cubes (optional)

Mix the honey with lemon juice until the honey dissolves, using a whisk or shaking in a jar or other tightly-sealed container (we just use a half-gallon glass jar). Add the water and refrigerate until cold or serve immediately over ice, if you prefer.

100% Whole Wheat Banana Bread

Preheat oven to 350.

Grease a Bundt pan or mini loaves pan.
**Tip – Just use the inside of the wrapper from the butter stick to grease the pan. It works great!

Combine with a hand mixer in a large bowl:
-2 eggs
-3/4 cup honey
-1/2 cup butter (1 stick), softened
-2 or 3 VERY ripe bananas, smashed (enough to yield about 1 1/4 cups once smashed).
-1 tsp pure vanilla extract

Then mix in:
-1/4 tsp sea salt
-1/2 tsp aluminum-free baking powder
-1/2 tsp aluminum-free baking soda (like Bob’s Red Mill brand)

Then mix in:
-2 cups 100% whole-wheat flour

Mix well. (This batter will be lumpy, due to the small chunks of banana and, possibly, some chunks of butter….that’s fine.)

If using a Bundt pan, bake 40-45 minutes, until toothpick comes out clean when poked in the middle of the loaf.

If using mini loaves pans, cut time back to 37 minutes. Ovens vary, so keep checking with toothpick.

Smothered Chicken

Serves 4

-4 boneless, skinless chicken breasts
-1 TBSP olive oil
-1 green pepper, sliced
-1 red pepper, sliced
-1 onion, sliced
-1/2 cup each: shredded mozzarella and cheddar cheeses

Spices
-1 tsp dried oregano
-1/2 tsp salt
-1/2 tsp garlic granules
-1/4 tsp black pepper
-1/4 tsp cayenne pepper

Preheat oven to 350 degrees and grease a large casserole dish. Thin/flatten breasts: place on a cutting board, cover with plastic wrap and beat gently with a meat mallet. Mix all spices together and spread over chicken breasts. Bake uncovered for about 20 minutes, until internal temperature reaches 170 degrees.

While chicken is cooking, heat oil in a large skillet. Add veggies and sauté until tender. When chicken is done, spoon vegetables over chicken and sprinkle with cheese. Return to oven until cheese melts. Enjoy!
