Korean Beef Recipe (Serves 4)

Ingredients:

2 or 3 cups uncooked white rice

1 lb lean ground beef (we prefer 90% or 93% lean)

6 cloves garlic, pressed or minced

3/4 cup packed brown sugar

3/4 cup reduced-sodium soy sauce

1 1/2 TBSP extra virgin olive oil

3/4 tsp ground ginger

1/4 – 1/2 tsp crushed red pepper flakes

3/4 tsp black pepper

1 bunch green onions, washed and sliced thinly

Directions:

Cook the rice according to the package directions.

Meanwhile, brown the beef in a large skillet over medium heat until no longer pink. Drain excess grease if needed. Add garlic and saute with beef for 1 minute over medium heat.

In a small bowl, whisk together the remaining ingredients (except for green onions). Pour mixture over the beef, and simmer for 1-2 minutes over medium heat.

Serve over rice and garnish with sliced green onions. YUM!!!
