This is one of my favorite creations of all time! Makes a great morning snack…goes great with eggs for breakfast…or with grilled meat (especially burgers) for dinner! (The Chipotle powder is a bit expensive, but a little goes a LONG way, so it lasts FOREVER!! Plus it adds SO much flavor that I’d pay any price!)

Ha! It’s all gone. LOL! Cinnamon is another great spice. In that case, I add a little sweetener like raw honey, too! Yum!
I am experimenting with baking at 450F for 30 minutes. Slice rather than dice. Place on baking sheet (1 potato per sheet otherwise too crowded to crisp). Drizzle with oil. Toss. Turn all slices at 15 minutes. I add the spices at the end of baking.
I love sweet potatoes. I am liking them better fried as in Christy’s recipe or baked like french fries.
Yum! I think I will make this using chili powder (I not a chipotle fan, I don’t go for smoked anything) or cinnamon. Have you ever tried dicing these in the Vitamix? I have been dicing so many things in there these days.
I’ve never tried dicing them in the VitaMix. Actually, I never chop anything in there….totally forget about that function. lol. Which things do you enjoy chopping in there most? I’ll have to give it a try.

This recipe looks amazing, I can’t wait to try it. I also will use my “As seen on TV Vidalia Onion Chopper”. If you haven’t met this amazing gadget yet, you might like to track one down. Under 20.00 at Target, and chops veggies into perfect little squares fast and easy. It is great for fried potatoes, minestrone, etc. Also, I like that it’s powered by me, and dishwasher safe!
Funny you should mention it, as we did recently invest in a $20 onion/veggie chopper and BOY does it make this recipe easier!!! 🙂
