Cheese Dip with Cumin & Cilantro

This dip only takes about 20 minutes to prepare – if you’re good at multi-tasking while you cook! And it’s oh….sooooo….yummy!!! OMG!

It also reheats well, so the 2 of us usually eat it twice with the amount it makes.

Makes about 2 cups

INGREDIENTS:

3 TBSP butter
3 TBSP white flour
2 cups milk (or half & half works, too)
4 oz grated white sharp Cheddar cheese*
4 oz grated Pepper Jack cheese*
3/4 tsp cumin, to taste
1/2 tsp sea salt, to taste
1/4 tsp crushed red pepper flakes, to taste (optional)
2 small tomatoes, seeded & finely diced
handful of fresh chopped cilantro

INSTRUCTIONS:

Melt butter in a medium saucepan over medium heat.

Add the flour and whisk constantly for 30-60 seconds until all flour is incorporated.

Add the milk or half & half (about 1/2 cup at a time); whisking to incorporate each time before adding more.

Cook until thickened to about a gravy consistency, adjusting the heat as needed.

Turn to Low heat, and add the cheese (about 1/4 of it at a time), melting each bit completely before adding more.

Add the cumin, salt, pepper flakes, tomato, and cilantro. Continue heating until all ingredients are warmed through.

Serve with organic tortilla chips.

*Sliced cheese works great, too. The packages I buy happen to be 6-ounces with 6 slices, so I just use 4 slices and tear them into pieces.
