Apple-Cilantro Coleslaw

applecilantroslaw

One awesome side effect of changing my diet to include occasional meals at restaurants is that I often find inspiration for creating my own “cleaner” versions of dishes that I eat while I’m out.

This recipe is the product of one of those great discoveries! (OUR RECIPES PAGE FOR MORE GREAT RECIPES!!!)

We went out to a BBQ place a while back, and their coleslaw was the best slaw I’ve ever had!

I started “deconstructing” it as I was dining, and I realized that much of its awesomeness was coming from a star ingredient….cilantro! OMG! I loooooooooove cilantro!!!

They had also added apples for some extra crunch and sweetness…and boy was I hooked!!! I couldn’t wait to get right to work on my own homemade version!!

Let me know how you like it!

Makes about 4 servings

INGREDIENTS:

Dressing ingredients:
1/2 cup homemade mayonnaise (or the “cleanest” store-bought version you can find, like Spectrum brand)
1 1/2 TBSP lemon juice (about 1 large juicy lemon)
1 TBSP apple cider vinegar (preferably raw)
2 TBSP sugar (or honey)
1/4 tsp ground pepper
1/2 tsp salt

Salad ingredients:
14 to 16 oz. store-bought coleslaw mix (red cabbage, green cabbage & carrots)
1 medium red apple, diced (we prefer Fuji apples)
1 small bunch cilantro, chopped
1/4 cup diced sweet onion or red onion (optional)

DIRECTIONS:

1. In a medium mixing bowl, whisk together the dressing ingredients until smooth.

2. Add all of the salad ingredients, and stir to combine.

3. Serve immediately or cover and refrigerate for later.

Stop preparing. Start DOING!

What are your dreams in life?

…Are you doing anything about them?

Or do you come up with reason after reason as to why you should “wait”…or why the timing isn’t “quite” right yet?

Do you let your fears of potential obstacles keep you from taking the steps you need to take to accomplish your goals?

Over-preparing is one of the many challenging roadblocks along the journey to success, but you’ve got to shake yourself free of its grip! In the video below, I share some tips for doing just that…

Makes about 6 cups

INGREDIENTS:

1 TBSP extra virgin olive oil (or more if needed)
2 medium onions, diced
16 oz. frozen cauliflower
4 cups water
3/4 tsp sea salt, to taste
1/8 tsp ground white pepper or 1/2 tsp freshly ground black pepper, to taste (I prefer it with white ground pepper because it gives a very distinct and tasty flavor!)
Freshly ground black pepper (for garnish) – optional

DIRECTIONS:

Heat oil in a medium sauce pan over medium heat.

Add onions and sauté until tender (but don’t allow them to brown).

Add cauliflower and sauté 1-2 minutes.

Stir in water. Bring to a boil.

Reduce heat and simmer for about 5 minutes, until cauliflower is tender.

Puree the soup until smooth. We prefer to use a stick/immersion blender, so we can puree it right in the pan. If you don’t have one, you’ll need to transfer the soup to a regular upright blender in batches.

**If the soup seems a bit “fuzzy,” then you’re not done blending! So just keep going until it’s almost as smooth as milk – you’ve got to blend this a bit longer than you’d think.

Season soup, to taste, with sea salt and ground black or white pepper.

Serve garnished with freshly ground black pepper and a swirl of extra virgin olive oil on top if you’d like (not shown here).
