Our trip to Yosemite National Park

We were sooooooooooo blessed to spend time in Yosemite National Park earlier this week!!!!! (See video below, and I’m sure you’ll understand why!!!)

We’ve been to the park one other time, but we visited that time in August, and most of the falls were completely dry. Yosemite Falls was just a trickle during that visit.

We’ve been hearing folks raving about all of the snow melt this spring, and we are currently working at a campground just 4 hours from the park…so we HAD to go see for ourselves!!!

Boy, are we glad we did!!!!!

The rivers were RAGING, and waterfalls were plummeting from mountains everywhere we looked!!!! So amazing!!!!

If you ever get a chance to visit (especially in late spring), you’ve GOT to go!!!

Honestly, I don’t recall EVER regretting a visit to ANY national park. So add ’em all to your bucket list!!!

Apple-Cilantro Coleslaw

One awesome side effect of changing my diet to include occasional meals at restaurants is that I often find inspiration for creating my own “cleaner” versions of dishes that I eat while I’m out.

This recipe is the product of one of those great discoveries! (OUR RECIPES PAGE FOR MORE GREAT RECIPES!!!)

We went out to a BBQ place a while back, and their coleslaw was the best slaw I’ve ever had!

I started “deconstructing” it as I was dining, and I realized that much of its awesomeness was coming from a star ingredient….cilantro! OMG! I loooooooooove cilantro!!!

They had also added apples for some extra crunch and sweetness…and boy was I hooked!!! I couldn’t wait to get right to work on my own homemade version!!

Makes about 4 servings

INGREDIENTS:

Dressing ingredients:
1/2 cup homemade mayonnaise (or the “cleanest” store-bought version you can find, like Spectrum brand)
1 1/2 TBSP lemon juice (about 1 large juicy lemon)
1 TBSP apple cider vinegar (preferably raw)
2 TBSP sugar (or honey)
1/4 tsp ground pepper
1/2 tsp salt

Salad ingredients:
14 to 16 oz. store-bought coleslaw mix (red cabbage, green cabbage & carrots)
1 medium red apple, diced (we prefer Fuji apples)
1 small bunch cilantro, chopped
1/4 cup diced sweet onion or red onion (optional)

DIRECTIONS:

1. In a medium mixing bowl, whisk together the dressing ingredients until smooth.

2. Add all of the salad ingredients, and stir to combine.

3. Serve immediately or cover and refrigerate for later.
