Makes about 4 servings

INGREDIENTS:
2 large yams, cut into 1/2-inch cubes
1 small head cauliflower, cut into small florets
6 TBSP extra virgin olive oil (or melted coconut oil)
2 tsp cinnamon
2 tsp dried thyme
1 tsp cumin
1 tsp fennel seeds
2 pinches clove powder
Sea salt and black pepper, to taste

DIRECTIONS:
Preheat oven to 400 degrees. Grease 2 casserole pans. Add all chopped veggies to a large mixing bowl. Add oil and spices and toss to coat evenly. Spread 1/2 of veggie mixture in each pan. Roast, uncovered, until tender (about 40 minutes). Be sure to stir the veggies every 10 minutes or so. Salt, to taste, and enjoy!

Almond Meal Brownies (gluten-free)

Unlike soooooooooooo many gluten-free baked goods…you won’t be sacrificing flavor or texture with this recipe. Not one bit!

But don’t take my word for it! Whip up a batch for yourself! I dare ya not to get addicted!!!

INGREDIENTS:

1 tsp butter or coconut oil (for greasing pan) – or use parchment paper instead
1 1/2 sticks butter (or 3/4 cup coconut oil)
1 1/3 cups sugar (Turbinado works well, too!)
1 TBSP pure vanilla extract
1/2 + 1/8 cup unsweetened cocoa powder
1/8 tsp sea salt
4 eggs, whisked
1 cup almond meal (we buy ours at Costco!)

DIRECTIONS:

Preheat oven to 325 degrees, and grease a 7 1/2″ x11″ glass pan – or line with parchment paper, instead – it makes life a LOT easier!

Melt butter (or coconut oil) in medium sauce pan over low heat.

Stir in sugar. Add vanilla, cocoa and salt. Stir until smooth.

Remove from heat and add eggs. Stir until smooth.

Add almond meal and stir until smooth. Transfer batter to pan.

Bake 45 minutes or until a toothpick comes out clean. Our new oven only takes about 30 minutes, so watch these closely the first time you make them…and check them frequently!

Cool for a few hours, and serve.

We actually find these more appealing (and sweeter) if they are cooled/stored in the fridge or freezer. The texture is awesome, don’t worry….they don’t turn hard or anything 🙂
